The drained juice is mixed with vinegar and left to mature for a few days. This results in a golden-yellow syrup with a pronounced quince aroma and a gentle acidity.

This shrub is versatile: Mix it with mineral water, sparkling wine, or tonic for refreshing drinks. In cocktails and mocktails, it replaces simple syrup and adds a fruity-tart note. It can also be used to enhance desserts, fruit salads, or dressings.

Since shrubs have a high sugar content, they should be consumed in moderation. They contain no alcohol and can be used as an alternative to soft drinks.

In the kitchen, shrubs are excellent for dressings on bitter salads, in marinades for vegetables or meat, or as a fruity note in chutneys and sauces. Desserts especially benefit from its delicate freshness: whether as a topping over yogurt, baked pear, or in sorbets.
